Ingredients:
- 1 (3- to 4-pound) whole chicken, cut into pieces
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups buttermilk
- Self-rising flour
- Vegetable oil
Directions:
- Sprinkle the chicken with salt and pepper. Place the chicken in a shallow dish or a zip-top plastic bag, and generously coat it with buttermilk. Cover or seal, then refrigerate for at least 2 hours.
- Remove the chicken from the buttermilk, discarding the excess. Dredge each piece of chicken in flour.
- In a deep skillet or Dutch oven, pour vegetable oil to a depth of 1 1/2 inches and heat it to 360°. Add the chicken pieces a few at a time, cover, and cook for 6 minutes. Uncover, and cook for an additional 9 minutes. Flip the chicken, cover, and cook for another 6 minutes. Uncover and cook for 5 to 9 minutes more, turning the chicken during the last 3 minutes for even browning if necessary.
- Drain the perfectly fried chicken on paper towels, and get ready to savor the unmatched goodness of homemade, authentic fried chicken.
