Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 can (12 ounces) cola
  • 1 cup butter, cubed
  • 1/4 cup baking cocoa
  • 2 large eggs, room temperature
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 can (12 ounces) cola
  • 1/2 cup butter, cubed
  • 1/4 cup baking cocoa
  • 4 cups confectioners’ sugar, sifted

Instructions:

  1. Preheat your oven to 350° and generously grease a 13×9-inch baking pan.
  2. In a large bowl, whisk together the first 5 ingredients. In a small saucepan, combine cola, butter, and cocoa. Bring the mixture to a boil, stirring occasionally. Add this to the flour mixture, stirring just until moistened.
  3. In a small bowl, whisk eggs, buttermilk, and vanilla until blended; then, add this mixture to the flour mixture, whisking constantly.
  4. Transfer the batter to the prepared pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. About 15 minutes before the cake is done, prepare the glaze. In a small saucepan, bring cola to a boil; cook for 12-15 minutes or until the liquid is reduced to 1/2 cup. Stir in butter and cocoa until the butter is melted; remove from heat. Add confectioners’ sugar and stir until smooth. Pour this glaze immediately over the hot cake.

🍰 What does Coca-Cola cake taste like?
The cola imparts a subtle flavor, balancing out the cake’s sweetness. Colas pair well with chocolate cake mixes, and you can experiment with other sodas like root beer, cherry cola, or Dr. Pepper for unique twists.
